  • Brussels sprouts – brussels sprouts are one of my ultimate favorite fall/winter vegetables. They get caramelized on the outside when roasted in the oven. Even if you think you don’t like brussels sprouts, you will like them when cooked this way! Swap out the brussels sprouts for other veggies you have on hand to keep this recipe super customizable.
  • Sweet potatoes – sweet potatoes cut into small cubes are the perfect complement to the brussels sprouts and apple chicken sausage. Be sure to cut them into uniform size pieces so they will cook evenly. You could swap the sweet potatoes for butternut squash or regular potatoes as well. Use cauliflower as a swap to make this meal low carb.
  • Olive oil – olive oil helps the spices stick to the brussels sprouts and sweet potatoes and help create that crispy crust on the outside as they are roasting.

How to make chicken apple sausage sheet pan dinner

Start by preheating the oven to 425F.

Cut the brussels sprouts in half (or quarters if vey large). Remove the wooden end from the bottom and any of the leaves that fall to the side as you are cutting them down (they will burn in the oven).

Put the brussels sprouts in a bowl. Drizzle the olive oil on top and the spices, stir well.

Distribute the brussels sprouts on the baking sheet lined with parchment paper or a silicone liner so they are all laying flat and not overlapping.

Cut the sweet potatoes into ½ inch cubes. Add sweet potatoes to the same bowl as the brussels sprouts. Drizzle with olive oil and sprinkle with salt. Stir well.

Place the sweet potatoes on the baking sheet next to the brussels sprouts. Be sure they are all in on flat layer (none of the sweet potatoes overlapping).

Put brussel sprouts/sweet potatoes in the 425F oven for 20 minutes.

While the veggies are roasting, cut the chicken apple sausage into coins.

After 20 minutes in the oven, remove the sweet potatoes/brussels sprouts and stir them well. Add the apple chicken sausage on top and bake for an additional 10 minutes.

Top tips

  • Cut the sweet potatoes the same size and keep the brussels sprouts around the same thickness to ensure everything cooks evenly.
  • Use an extra-large sheet pan to ensure all the ingredients can cook in one layer so they caramelize not steam. If you don’t have an extra-large sheet pan, divide the sweet potatoes and brussels sprouts between two regular sheet pans.
  • Add the sausage at the beginning of cooking if you like it really crispy, otherwise add it to warm through during the last 10 minutes of cooking.

  • Swap the sweet potatoes:  Use regular potatoes or butternut squash in place of the sweet potatoes or make this low carb by using all veggies instead (cauliflower would be a great substitute for the sweet potatoes).
  • Use a different spice blend: Change things up by making it smoky with some smoked paprika (about 1 teaspoon) or give this a cajun kick by add 1-2 teaspoons cajun seasoning to the potatoes.
  • Make it sweeter: Add apples or add 1 tablespoon of maple syrup to the dijon mixture for the brussel sprouts and 1/2 tablespoon maple syrup to the sweet potato mixture.
  • Use a different flavor of chicken sausage. Swap out the chicken sausage for a different flavor (like Italian or Sundried Tomato, or Andouille) and change out the spice blends to match.
  • Add a sauce: Drizzle with maple tahini dressing or spice it up with creamy spicy tahini sauce.

Chicken apple sausage is made from ground chicken, apples and spices all formed into a sausage link. Most of the chicken apple sausages I’ve found are already fully cooked, so just need to be reheated.

  • Whole Foods (this does have a pork casing)
  • Most grocery stores carry Aidells Chicken and Apple Sausage (this does have a pork casing)

Can you use other sausages?

Yes, you can swap out the chicken apple sausage for any chicken sausage, turkey sausage or regular sausage. Be sure they are already pre-cooked and just need to be warmed through. Some great options would be:

  • Turkey Kielbasa – add ½ teaspoon smoked paprika to the sweet potatoes to give the dish a smoky kick
  • Italian Chicken Sausage (or Sundried Tomato) – add 1 teaspoon italian seasoning in place of the dried thyme and add a sprinkle of red pepper flakes at the end.
  • Andouille – sprinkle the sweet potatoes with 1-2 teaspoons cajun seasoning

Can you use frozen vegetables?

Yes! Frozen brussel sprouts are great when cooked in the oven. You may need to cook this for closer to 40 minutes to get the same golden crust on the brussel sprouts. You could also use frozen cauliflower or broccoli in place of the brussel sprouts, ready in 30 minutes.

Storing leftovers

Fridge: Store leftover chicken apple sausage sheet pan meal in an airtight container in the fridge for up to 4 days.

Reheat in the microwave 1:30-2 minutes or on the stove in a skillet over medium heat. You could also reheat in the air fryer at 360F for 4-5 minutes.

Freezer: I do not recommend freezing leftovers of this in fear that the brussel sprouts would get soggy when defrosted.
